October Foodie Pen Pals

Have you seen the Skittles pox commercial? It is so gross. That really has nothing to do with Foodie Pen Pal Reveal Day, other than the fact that I’ve never watched this much tv, while simultaneously being so busy, all while munching on my pen pal goodies. One-handed food is the best!

As mentioned last month, I didn’t know if I’d be able to participate this month because of my due date. And I have to admit, it wasn’t easy! The shopping part was easy, Genevieve even had her first trip to Trader Joe’s to help me pick what would wind up in my foodie, Natalie’s, box.

But physically opening up my computer has been quite the chore! My iPhone has become my best friend, and is my sole source of email checking, facebooking, and blog reading. I’m not really sure how Kath and Caitlin were able to be back to daily blogging right after giving birth. I’m lucky if I manage a shower before noon!

But I digress. Genevieve is finally napping, therefore I had enough time to photograph my goodies and get this blog post written, all while slamming an early dinner. I’m totes impressed with myself. #itsthelittlethings

Andrea of Pretty Wings & Other Things sent me a fabulous package this month!

She included a fun little book she made to describe all of the items. Cute, eh?

She treated me to some fun Texas snacks, including Texas shaped crackers and some salsa.

To wash down the snacks were lots of fun drinks, including sparkling water, iced coffee, and k-cups for hot chocolate and sweet tea.

And my absolute favorite item? Pumpkin spice English muffins! OMG, why are these not available year round? #pumpkinismyfavorite

Steel Cut Oatmeal Pumpkin [Lactation] Cookies

Last year, my favorite pumpkin recipes were pumpkin French toast and pumpkin hot buttered rum. Mmmm hmmm. This year, I took my love for pumpkin and whipped up a batch of milk production enhancing morsels.

From what I’ve read, if I add brewer’s yeast to pretty much any baked good it can help my milk production. Oatmeal helps too. I looked up a few cookie recipes, and all looked okay, but none excited my taste buds. So instead I wound up getting creative, a whopping 5 days after Genevieve was born, and whipped up a batch of pumpkin infused lactation cookies. If you aren’t trying to boost milk production you can omit the brewer’s yeast and you’ve got a fabulous fall cookie to much on.

Steel Cut Oatmeal Pumpkin [Lactation] Cookies

*adapted from this recipe


1/4 cup steel cut oats

1 cup water

1.5 cups organic raisins

3/4 cup butter

3/4 cup white sugar

3/4 cup brown sugar, packed

1/2 cup canned pumpkin

1 egg

1 tsp. vanilla bean paste, (can sub vanilla extract)

2.5 cups unbleached flour

1 tsp. baking soda

1 tsp. salt

1 tsp. cinnamon

1 tsp. pumpkin pie spice

2-4 TBS brewer’s yeast (omit if you don’t want lactation cookies)

3 TBS chia seeds

3 TBS ground flax seed

3/4 cup pecans, chopped


In a small pot, bring oats and water to a boil. Reduce to simmer for 10 minutes. Add raisins and allow mixture to cool.

Preheat oven to 375.

In a large mixing bowl, cream together butter and sugar. Add egg vanilla, and pumpkin, beat until smooth. In a separate bowl, blend together flour, baking soda, salt, cinnamon, pumpkin pie spice, brewer’s yeast, chia seeds, and ground flax seed. Add dry ingredients to wet ingredients, fold in steel cut oat and raisin mixture, and add nuts.

Spoon cookie dough onto greased cookie sheets, or cookie sheets covered with a silpat, and bake 15-18 minutes. Cookies are done when the tops are slightly browned. Remove cookies and cool on a wire rack.

And now that it’s been 2 weeks(!) her features are coming into themselves, as the swelling from birth dissipates.

September Foodie Pen Pals Reveal

Hello October, aka best month of the year! And welcome to foodie pen pals reveal day.

The Lean Green Bean

In September I sent off a package to reader Rachel, and totally spaced taking a picture of the goods, and I received a package from Mike.

Umm, yum! Mike took my love for garlic and ran with it for an Italian themed box. Love his business card and Made by Mike pen!

These are going to be fab with some cheese and wine (soon!).

I’m ueber excited about the Himalayan Pink Salt! The meatless spaghetti sauce is Mike’s favorite, and I think it will be very tasty with tortalini or ravioli.

I’ve eaten almost this entire bag of deliciousness.

And finally, Mike is a fellow lover of Skittles, so look what wound up in my box! Thanks again Mike!

I thought September might be my last foodie pen pals experience for a while, but it looks like I’m in for October! My first month of participation was January, and I’ve really enjoyed the program! Thanks so much Lindsay for making it happen month after month!

And due to Baby Spinach’s due date (Oct. 4th) I figured October was out. I’m a little anal neurotic obnoxious type-A, and really wanted to participate each month of the 2012 year. So I was a bit bummed about the prospect of missing October and the hubs offered to buy whatever I wanted for my October foodie pen pal. Whoo hoo! I’m in for another month 🙂
