Cheesy Taco Casserole

I really hate being lactose intolerant, because I really love cheese.

Last night I left Libb some post-it notes in The Best of Cooking Light Everyday Favorites cook book. I’ve made this recipe as is before, but it calls for fat-free cheese and that pretty much tastes like rubber. So I wrote comments about everything, subbing what we had in the fridge for what the recipe called for. Libb made more modifications than I wrote, but I’m glad he did because it turned out really tasty.

Not the healthiest, but not too bad either.

Makes 4 servings

Nutritionals: Cal: 459, Carb: 43, Fat: 22, Pro: 22

Ingredients

1  cup  shredded pepperjack cheese
1  cup  chopped tomato
1  cup low-fat cottage cheese
1/3  cup  diced sweet onion
2  tsp  chili powder
2  garlic cloves, minced
6 flour tortillas (we used Tortillaland bake yourself tortillas)

Cooking spray
1  cup  taco sauce
1/3  cup  shredded cheddar cheese

Directions

Pre-heat oven to 375

Combine first 6 ingredients in a medium bowl.

Arrange 2 tortillas in bottom of a baking dish coated with cooking spray. I had to tear the tortillas so they would fit, like so.

Spread 1/3 taco sauce over tortillas and top with half the cheese mixture.

Repeat procedure with 2 tortillas, 1/3 taco sauce and remaining cheese mixture

Top with remaining tortillas and rest of taco sauce. Sprinkle cheddar cheese on top.

Bake at 375° for 20 minutes or until cheese melts.

Top with avocado, fage (or sour cream) and cilantro.

I have no idea why I despised avocados for the first 22 years of my life. Oh how I missed out!

I’m glad there are 4 servings…someone can’t wait for the next leftovers night.

A student checked this out today, and then promptly checked it back in. Perhaps he was too chicken to read it.

Whatever the case, it made me giggle. And I loved the cost of an imported bottle of French wine.

But let’s rewind.

My day started at 5:18 (ahem, snooze, 5:27) as planned. I hit the gym and elliptisized myself through the latest US Weekly. Always a good motivator. Trashy magazines plus CNN really help drag me out of bed.

Then it was off to a staff meeting. As these are held in my “home” (aka the library) I always try to be a bit early and straighten up. This morning I happened to win a prize for showing up on time.

It looks like Diet Dr. Pepper and I will have another rendezvous.

And although I had a yummy (repeat from yesterday) oatmeal ready to be heated and consumed, I never made it to the microwave down the hall because I just got too busy. Luckily I have a stash of healthy snackies at work and a toaster in my office.

Today’s menu consisted of:

Brekkie:

Whole wheat english muffin w/peanut butter and a nanner.

Lunch:

Salad of spinach, onion, bell pepper, tomato and lemony chicken (dressed with homemade dressing) and a strawberry chobani.

Snackies:

Cup-o-comfort w/some caramel macchiato creamer (that needs to go. Not only does this not taste all that great, it is full o chemicals and goes against the whole cutting processed foods thing I’ve got going on).

And some popcorn w/lemon-lime seltzer on the side.

One of the perks of having Libb is that I can text him in the morning with my dinner request and he’ll get it prepped for me. Kind of like having a live-in sous chef. Tonight’s menu is a play on a cooking light cheesy taco casserole. If it is tasty I’ll share. If not I’ll just hug a chicken and call it a day.
